The Wall Street Journal reports efforts to raise bigger chickens is causing a new issue: “woody breast.” The muscle condition in fast-growing broilers poses no human-health risk, but can make meat feel gummy and harder to chew.  Since 1955, the average weight of a chicken has risen from just over 3 lbs. to 6.24 lbs
