#ILLINOIS OSTRICH INDUSTRY PREPARED TO TAKE OFF

As demand for exotic meats and health-conscious, locally sourced food thrives, ostrich farmers are hoping for the ostrich market, which shriveled in the early 2000s due to lackluster consumer demand and oversaturation, is poised to rebound. According to the most recent U.S. agricultural census in 2012, Illinois is home to the country’s third largest inventory of ostrich, and Illinois farmers are ready to put their birds to good use, trying to match production with the recent surge in demand, as reported Chicago Tribune.
