Thanks to Senate Bill 2797, passed by both the Illinois House and Senate, but not yet signed into law, makers of craft spirits in Illinois may soon be able to produce up to 100,000 gallons of spirits a year — up from 35,000 gallons per year per license that’s currently allowed. While some distillers welcome the change, others feel the legislation will throttle the growing industry, because the bill will close a loophole in the existing law that allows the same distiller to produce spirits under more than one license.
